1 حبة بصل مفروم
2 حبة طماطم
1/2 كوب ماء
1 ملعقة كبيرة زيت نباتي
1 ملعقة كبيرة معجون الطماطم
1/2 ملعقة صغيرة ثوم مفروم
1/2 ملعقة كبيرة سكر

فلفل أسود
الدجاج
1 صدر دجاج
صلصة المعكرونة
1 حبة بصل مفروم
2 حبة طماطم مقطّعة مكعبات
1 ملعقة كبيرة زيت نباتي
1 ملعقة صغيرة ثوم مفروم
1/2 ملعقة صغيرة بهارات دجاج
1/2 ملعقة صغيرة فلفل حار رقائق
ملح
فلفل أسود
صلصة البشاميل
1 كوب حليب 250 مل
2 ملاعق كبيرة زبدة 30 غ
1 ملعقة كبيرة دقيق 20 غ
جوزة الطيب

أولاً لعمل صلصة المكرونة نعصر الطماطم مع الماء ومعجون الطماطم بالخلاط ثم نشوِّح البصلة المفرومة والثوم بالزيت الساخن على نار متوسطة وعندما يلين قوامهم نضع عصير الطماطم والبهارات والسكر ونترك الخليط على النار حتى يقل حجمه ويصبح سميك القوام ثم نُخرجها بطبق ونتركها جانباً

أنا استخدمت مكرونة ريجاتوني /‌ Rigatoni أو نستخدم أي نوع متوفر ثم نقطّع الدجاج إلى مكعبات متوسطة الحجم ونجهّز بقية المكونات لطهي الدجاج

بقدر على نار متوسطة نشوِّح البصل والثوم بالزيت الساخن ثم نُضيف مكعبات الدجاج ونقلّبها حتى يتغيّر لونها ثم نضع مكعبات الطماطم والبهارات

وأخيراً نضع صلصة المكرونة ونترك الخليط على نار متوسطة لمدة 5 دقائق تقريباً

في هذه الأثناء نسلق المكرونة بالطريقة المعتادة ثم نصفّيها ونتركها جانباً ونجهّز البشاميل بوضع الزبدة بقدر على نار متوسطة وعندما تذوب نُضيف الدقيق ونقلّب جيداً حتى لا يتكتّل الدقيق وعندما يتجانس الخليط ويصبح ذهبي اللّون نضع الحليب والملح وجوزة الطيب ونستمر بالتقليب إلى أن يثخن قوام الخليط ويبدأ بالغليان ثم نرفعه عن النار

نُعيد وضع خليط الدجاج والصلصة على النار مرة أخرى ونُضيف إليهم المكرونة المسلوقة وصلصة البشاميل ونقلّب كل المكونات معاً جيداً ونتركهم على النار لمدة دقيقتين مع التقليب المستمر

نوزِّع الخليط بقالب فرن ثم نغطّي كل الوجه بالجبنة الموتزاريلا ونُدخل المكرونة إلى فرن ساخن بحرارة 180° لمدة 15 دقيقة تقريباً أو حتى تذوب الجبنة على الوجه وتصبح ذهبية اللّون

يُخرَج القالب من الفرن ويُزيَّن الوجه بالبقدونس أو الشبت المفروم وأخيراً تُقدَّم باستا الدجاج بالطماطم والبشاميل ساخنة أو دافئة
