تقريبا كأس زبدة ذائبة

ماء الزهر

500 غ مكسرات
1 كأس سكر
1 ملعقة صغيرة فانيليا
1 ملعقة صغيرة قرفة

1 أو 2 ملعقة كبيرة زبدة زبدة طرية
تحضير القطع
نشاء
250 غ سمن ذائب
500 غ عسل

نستعمل صينية 30x25 سم
نخلط الفرينة الفانيليا ثم نضيف الزبدة او السمن او المارغرين ذائبة و نخلط جيدا، ثم نخلط قليل من الماء و الملح و نضيفهم الى العجينة و نخلط

نضيف تدريجيا الماء مخلوط بقليل من ماء الزهر و نخلط حتى نتحصل على عجينة طرية، ثم نلمها حوالي دقيقتين ثم نقسمها الى 4 كرات و نضعهم في كيس بلاستيكي و نتركهم يرتاحوا 4 ساعات على الاقل

لتحضير الحشو نطحن 500غ لوز او كوكاو (الكوكاو يجب ان يكون محمص قليلا) ثم نضعهم في الصينية و نقيس بالاصبع لنعرف قياس الصينية التي يجب ان نستعملها

نخلط المكسرات مع كأس سكر و قليل من الفانيليا و القرفة ثم نضيف ملعقة مارغرين و نخلط جيدا، ثم نضيف ماء الزهر (تدريجيا) و نخلط بدون عجن، ثم نغطيه و نتركه يرتاح 4 ساعات

نرش كل كرة من العجينة بالنشاء و نفتحها بالحلال و نقسمها الى 3 اجزاء ثم نرشهم بالنشاء و نضعهم فوق بعضهم البعض، ثم نفتحهم بالالة في الرقم ما قبل الاخير و نرشهم بالنشاء و نضعهم فوق بعضهم البعض

بعد ذلك نقسمهم على جزئين و نفتحهم في الرقم الاخير و نرتبهم كطبقات في صينية مدهونة بالسمن و ندهن كل طبقة بالسمن ذائب و نرشها بقليل من النشاء، و كل طبقة تكون عكس الطبقة التي سبقتها

بعد ما نصل الى 6 طبقات و الطبقة الاخيرة لا ندهنها، نضيف الحشو بعد ما نفتحه باليد و نسويه، ثم نضيف 5 طبقات اخرى بنفس الطريقة و نفس الخطوات

ننزع الاطراف الزائدة، ثم نعين خطوط التقطيع بسكين حاد ثم نقطعها بسكين صغير، ثم نفتح فتحات صغيرة من الاعلى بالسكين و نضع في كل فتحة حبة لوز، ثم ندهنها بالسمن

نغطيها بكيس بلاستيكي و نتركها ترتاح على الاقل ساعتين و من الافضل ليلة كاملة، ثم ندخلها للفرن ساخن على 180 درجة نشعله من الاسفل فقط حتى يحمروا الاطراف ثم نشعله من الاعلى و نهبط الصينية للاسفل

بعد ما تطيب و تأخذ لون ذهبي، نسقيها مباشرة بحوالي 500غ عسيلة و نتركها ترتاح من الافضل ليلة كاملة، ثم نقطعها
